GRAPE VARIETIES: Grenache, Syrah and Mourvèdre
SOIL: The soil is stony, limestone, and clay.
TASTING NOTES: The blend of the different grape varieties gives
aromas of red berries, plums and cherries with
a peppery note. Mineral notes, characteristic of
Mourvèdre.
VINIFICATION: Mechanical harvesting during the night in order to
guarantee the freshness of the grapes. The 3 grape
varieties are vinified separately. Cold maceration
before fermentation. Fermentation on skins for 2
weeks before light pressing. No ageing.
SERVING SUGGESTIONS: It goes perfectly with meat dishes and lightly spiced
dishes.
