GRAPE VARIETIES: 60% Syrah – 40% Grenache

SOIL: The 2 hectares of vineyards planted in a chalky-clay terrace (situated in Bagnoles hills) are overhanging Carcassonne city.

TASTING NOTES: Intense red colour.
Nose both spicy and fruity with typical grapefruit perfume from our “terroir”.
Roundness in mouth is characterised by a good balance between acidity and smoothness.
Pepper and citrus fruits aromas with long finish.

VINIFICATION: Treading – Destemming. Maceration in tank under regulated temperature about 25°C, 30°C at the end of maceration process.
Traditional winemaking in tank with daily devatting in the early stage of fermentation.

SERVING SUGGESTIONS: This powerful and noble wine goes perfectly with delicatessen food, meats and ripe cheeses.
Serve at 18°C.
